Directions:
- Noodles should be prepared per the directions on the package and then set aside.
- In a small bowl, combine the fish sauce, brown sugar, tamarind concentrate, lime juice, and sriracha.
- In a big nonstick skillet, heat the oil over medium heat. Add the tofu and simmer for 4 to 5 minutes, stirring periodically, until just faintly browned. By pushing the tofu to the side, you may let the extra oil seep into the skillet’s center. Add the shrimp and shallots to the pot and simmer, stirring periodically, for 3 to 4 minutes, or until the shrimp are opaque and cooked through. Push the tofu to the side, letting the extra oil seep into the skillet’s center as you do so. Cook the beaten egg in the skillet for 30 seconds .The tofu, shrimp, and egg are all pushed to the side. The peppers should only be cooked for 2 minutes, or until they start to soften somewhat. Noodles, scallions, bean sprouts, and sauce should all be added to the skillet. Add the tofu, shrimp, and egg to the ingredients and stir-fry them while coating them with sauce and boiling them for three to five minutes to thicken.
- Transfer the stir-fry to a serving bowl, then garnish with cilantro leaves and chopped peanuts. Serve right away with lime wedges.
