  •  1/4 cup of cilantro leaves

  1. Noodles should be prepared per the directions on the package and then set aside.
  2. In a small bowl, combine the fish sauce, brown sugar, tamarind concentrate, lime juice, and sriracha.
  3. In a big nonstick skillet, heat the oil over medium heat. Add the tofu and simmer for 4 to 5 minutes, stirring periodically, until just faintly browned. By pushing the tofu to the side, you may let the extra oil seep into the skillet’s center. Add the shrimp and shallots to the pot and simmer, stirring periodically, for 3 to 4 minutes, or until the shrimp are opaque and cooked through.
