Here is a recipe for bolani that serves 4-6 people:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup water

For the filling:

  • 2 cups mashed potatoes
  • 1 cup finely chopped onions
  • 1 cup finely chopped cilantro
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin

Instructions:

To make the dough, combine the flour and salt in a mixing bowl. Slowly add the water, stirring with a wooden spoon or your hands, until the dough comes together. The dough should be smooth and elastic after 5 to 10 minutes of kneading.. Cover the dough with a damp cloth and set it aside to rest for 30 minutes.

Heat a griddle or frying pan over medium heat. Place the bolani on the griddle and cook for 2-3 minutes on each side, or until it is golden brown and crispy. Serve the bolani hot or cold, with yogurt or a dipping sauce on the side. Enjoy!
