PICKLING CABBAGE

  • 1 head small cabbage
  • 4 tbsp kosher salt

TO MAKE PORK BELLY

  • 2 1/2 lb thick pork belly
  • pinches salt and pepper
  • 2 roughly sliced onion
  • 1 apple
  • 10 cloves garlic
  • 2 bay leaves
  • 1/2 cup sweet rice wine 
  • 1 tbsp ginger paste
  • 1 Asian leek

INGREDIENTS FOR RADISH SALAD:

  • 1 1/4 lb Korean radish 
  • 1/2 cup Korean corn syrup
  • 2 tsp salt
  • 2-3 tbsp Korean chili flakes 
  • 1 tbsp Korean fish sauce
  • 1/2 tbsp salted shrimp
  • 1 tbsp minced garlic
  • 1/2 tbsp sugar
  • 1 tbsp Korean plum extract
  • 1 tsp ginger paste
  • 2 green onion

TOPPING SAUCE:

  • 3 tbsp Korean soybean paste
  • 1 tbsp Korean chili paste 
  • 2 tsp minced garlic
  • 1 tbsp Korean plum extract 
  • 2 tsp sesame oil

  1. Use the yellow napa cabbage inside. Cut the cabbage into lengthwise quarters. You could just require 2 of them, depending on how big your cabbage is. Drain after giving the cabbage a good wash.

PORK BELLY TO COOK
