The garlicky-sweet-spicy sauce that is drizzled over these simple Chinese green beans makes them tough to refuse. They are pan-fried until blistered perfection.
Ingredients:
- 1 quart of vegetable oil
- 13 pounds of fresh green beans, trimmed
- 5 tablespoons garlic, minced
- 5 tbsp fresh ginger root, minced
- 2 tbsp of kosher salt
- 1 tablespoon black pepper, coarsely ground

The preparation of this dish is really quick.
The quick rundown is as follows,
Clean and trim the beans:
Make sure the beans are thoroughly dried. Without it, they will steam in the pan and fail to blister as they should.
Construct sauce:
Combine soy sauce, honey, sambal oelek, and 1 tablespoon of water in a small bowl. Set apart.
Cook the beans:
Oil in a big skillet over medium heat to cook the beans. Add green beans to heated oil. After giving them a brief toss in the oil to coat them, let them sit undisturbed for about 4 minutes, or until they begin to faintly brown. About 3 more minutes later, flip them over to let the other side caramelize. Re-toss the beans, then cook them for another 3 minutes or more, or until they are blistered and soft. If the
beans do not roast sufficiently, turn the heat up to medium-high. Doing this in two batches may also be a good idea.
Finishing:
Finish by turning the heat down to low and adding the garlic. Sauté until fragrant, approximately a minute. The beans should be coated in the sauce after adding the soy sauce mixture and sautéing for another minute. Serve instantly.
