Cauliflower Curry Recipe
Once you make your own hummus, you won’t want to buy it from the store again. It makes a fantastic starter or snack when served with fresh vegetables and pita.
Ingredients
- 1½ cups cooked chickpeas
- ⅓ cup smooth tahini
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice, more to taste
- 1 garlic clove
- ½ teaspoon sea salt
- 5 tablespoons water
- paprika, red pepper flakes, or parsley, for garnish
- warm pita bread and/or veggies, for serving
Directions
- Tahini and lemon juice should be combined in a food processor bowl. After processing for 1 minute, scrape down the sides and bottom of the bowl, and then continue processing for an additional 30 seconds. This extra time is used to “whip” or “cream” the tahini, which gives the hummus its smooth, creamy texture.
- The beaten tahini and lemon juice should be combined with the olive oil, cumin, minced garlic, and a half teaspoon of salt. After scraping the bowl’s sides and bottom, process for a further 30 seconds, or until everything is thoroughly combined. Chickpeas opened, drained, and rinsed. The food processor should filled with half of the chickpeas. Process for 1 minute. Clean the bowl’s sides and bottom, add the remaining chickpeas, and process for 1 to 2 minutes, or until thick and very smooth.
Persian Saffron Rice
- Most likely, the hummus will be too thick or contain little chickpea pieces. To correct this, steadily add 2 to 3 tablespoons of water while the food processor is running until the desired consistency achieved.
- Add salt as desired after tasting. Olive oil and paprika should added while serving hummus. Refrigerate homemade hummus for up to a week after storing in an airtight container.
