Grilled za’atar chicken is a delicious and easy Middle Eastern dish that is perfect for a summer barbecue or a weeknight dinner. The za’atar spice mix, a blend of thyme, sumac, and sesame seeds, adds a unique and flavorful twist to the traditional grilled chicken.

Zaatar spice mix can be found in many Middle Eastern markets or online, but if you can’t find it, you can make your own by mixing together 2 tablespoons of dried thyme, 1 tablespoon of sumac and 1 tablespoon of sesame seeds.

Chicken Kabuli Pulao Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons zaatar spice mix
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges, for serving

Directions

  1. In a small bowl, mix together the olive oil, zaatar spice mix, salt, and pepper to make a marinade.
  2. Place the chicken breasts in a large resealable plastic bag and pour the marinade over the chicken.
  3. Seal the bag and massage the marinade into the chicken until it is evenly coated.
  4. Refrigerate the chicken for at least 30 minutes, or up to 2 hours, to allow the flavors to meld together.
  5. Preheat your grill to medium-high heat.
  6. Remove the chicken from the marinade .
  7. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F.
  8. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  9. Serve the grilled za’atar chicken with lemon wedges on the side.
