INGREDIENTS:

Both olive oil and vegetable oil worked well in this recipe. Each is effective. Make handi with mustard oil if you’re using achari masala.

HOW TO MAKE chicken handi?

Let’s look at how to prepare chicken.

  • Mix thoroughly and reserve until the gravy is prepared. (This cornmeal coating will keep the chicken moist and tender.)             
  • Next, fry onions in 14 cups of hot oil in a wok for 5 to 7 minutes, or until golden. The wet spices, which include green chili paste and ginger garlic paste, should then be added.
  • Stir the mixture while it sizzles. Then incorporate the tomatoes and dry spices.     
  • Cover the pot and cook the tomatoes for 10 minutes over medium heat, or until they are soft and the oil has separated from the tomatoes’ surface. (Overripe, softer tomatoes will quickly melt.)
  • Transfer the yogurt and the gravy to a blender. In order to mix the hot gravy, yogurt also assists in bringing it to room temperature. Blend the gravy until it is extremely smooth and reserved.
  • Next, add butter to the same skillet and stir-fry the marinated chicken until the color of the chicken changes.
  • Add fenugreek and blended gravy to the chicken. (Other herbs, such as cilantro or curry leaves, are options.)
