Homemade Iced Mocha Dalgona Coffee

Process to make Iced Mocha Dalgona Coffee
Step 1: Soak cashews and dates for at least an hour in boiling water.
Second: Blend dates and cashews that have been soaked in water for a short while in a high-speed blender ( time depends based on the power of your blender, if using a high-speed blender, it will take 3-5 mins if not it might take more than 5 mins )
Step 3: If necessary, strain the cashew milk and set it aside.
Step 4: In a medium-sized mixing bowl, combine instant coffee, cacao powder, organic sugar, and boiling water. Whip for five minutes, or until stiff peaks form ( this process is faster and easier with an electric hand or stand mixer over manual whisking )
Step 5: Fill the serving glass with ice. Prepared whipped coffee should be placed on top of the prepared cashew milk in 3/4 of the glass ( dalgona ). Serve cold.

- 2 tbsp Instant Coffee
- 2 tbsp Organic Sugar
- 1 tsp Cacao Powder
- 2 tbsp Hot Water
Plant Milk Alternatives
For this recipe, we’re using homemade instant cashew milk. I’ve tried making coffee with different plant milks, such oat, almond, and soy, but I feel like cashew milk tastes the closest to cow milk. Feel free to substitute another plant milk of your choosing if you don’t want to use cashew milk. In order to make our cashew milk a little bit sweeter for the coffee, we are also adding some dates to it.
