  1. After 5 to 10 minutes of soaking in warm water to soften, drain the noodles and cut them into pieces using kitchen shears.
  2. In the meantime, combine the brown sugar, vinegar, garlic, 3 tablespoons sesame oil, soy sauce, and the garlic in a bowl.

  3. Toss 2 tablespoons of the soy sauce mixture with the meat in a separate bowl.
  4. In a sizable nonstick skillet over high heat, warm 3 tablespoons of sesame oil. Stir-fry for 3 minutes after adding the onion and 2 teaspoons of salt. When the beef  nearly done, add it and stir-fry. Toss into a basin. Clean and dry the skillet before heating it up again and adding 2 teaspoons of sesame oil. Stir-fry the mushrooms and carrots for 3 minutes. Add the noodles and 2 tablespoons of the soy sauce mixture, stir-fry for 1 minute, then add 1/3 cup of water and simmer for an additional 3 minutes, or until the noodles are barely soft. Place in the bowl that contains the beef. Return the skillet to the heat and add the final 2 teaspoons of sesame oil after cleaning it. Cook, stirring, the spinach while adding the remaining soy sauce mixture.
