LA Galbi (Korean BBQ Short Ribs):
Use my tried-and-true recipe for the ideal Galbi marinade to make LA Galbi (Korean BBQ Short Ribs) at home. The marinated short ribs can be pan-fried, broiled in the oven, or grilled over charcoal.
You can prepare mouthwatering Korean barbecue at home. It’s simple to make and depends entirely on the marinade and high-quality meat! One of the most common BBQ dishes in Korean households is galbi (or kalbi), or Korean beef short ribs, especially for special events and celebrations. Here is the recipe I’ve used time and time again for the ideal Galbi marinade.
The galbi flesh is delicate and luscious while remaining attractively browned and caramelized on the outside. It is marinated in a sauce that is the ideal combination of sweet and salty.
Ribs of beef:
There are two different cuts for beef short ribs, as I previously described in another galbi post. First up is the English cut, which involves separating and slicing the ribs into manageable pieces. The English cut is used for braising, or it can be butterflied and grilled.
The flanken cut, for which the ribs are thinly sliced across the bones, is the second option. The flanken cut is often referred to as “LA galbi” among Koreans, allegedly named after the city where early Korean immigrants first used this cut to create galbi gui. LA galbi is currently quite well-liked even in Korea.
The marinade galbi:
These days, people tenderize short ribs, a difficult cut of meat, using a variety of ingredients including kiwi, pineapple, cola, etc. My favorite galbi ingredient is Korean/Asian pear, which is common. Alcohol and grated onion, both present in the marinade, help to tenderize the meat. A perfect harmony of sweet and salty flavors can be found in these ribs.
Use an apple instead of Asian pears if you can’t find them. Using kiwi or pineapple, which are both potent meat tenderizers, in moderation will prevent over marinating the meat.The fruit, onion, garlic, and ginger can all be combined in a tiny blender for ease. Never hurry the marinating process! It is recommended that the ribs marinade for at least 6 to 8 hours. Better is overnight to twenty-four hours. The length of marinating time depends on the thickness of the meat.
Grilling LA galbi over charcoal or wood charcoal recommend, but a gas grill or a grill pan over the stove top also works nicely. Sometimes I’ll pan-fry them or broil them in the oven.Place the meat on the top shelf of the oven, normally about 6 inches below the broiler, in a single layer on a broiling pan. Cook the ribs for 5 to 6 minutes, or until they are just beginning to brown and caramelize.

If you can find them, crown daisy (ssukgat) and perilla leaves (kkaennip) are excellent vegetables to include in your wraps.
▢ 4 pounds cross-cut beef short ribs
▢1/2 cup soy sauce
▢1/2 cup water
▢1/4 cup sugar
▢2 tablespoons honey
▢1/4 cup rice wine or mirin
▢2 tablespoons sesame oil
Mandu Recipe (Korean Dumplings)
▢1/2 Korean/Asian pear
▢1/2 medium onion
▢2 tablespoons minced garlic
▢1 teaspoon minced ginger
▢3 scallions thinly sliced
▢½ teaspoon black pepper
▢1 teaspoon sesame seeds
When it comes to the ribs:
Rinse and thoroughly drain the ribs to remove any remaining bone dust. With your hands or a meat tenderizer, lightly pound the meat to make it more pliable. Although you can omit it if you choose, this step aids in the meat’s tenderization.
To make the marinade:
Mix thoroughly all the marinade ingredients. 6 to 8 hours of marinating the meat (overnight for best results). The length of marinating time depends on the thickness of the meat.

The ribs’ cooking:
Over a medium-high flame, preheat the grill. Grill theshort ribs for three minutes on each side, just rotating once. The greatest grilling surfaces are over wood or charcoal, although a gas grill or a grill pan over a stove top also works nicely.
Preheathe oven and ready to broil before you can broil galbi. Place the meat on a broiling pan in one layer and set it on the top oven rack, usually about 6 inches below the broiler. Cook the ribs for 5 to 6 minutes, or until they are just beginning to brown and caramelize. Cook for an additional three to four minutes after turning them over. Watch them closely to prevent burning.
