You get dependent on them, which is why they are known as “mayak eggs.” In Korean, the word “mayak” literally means “drug or narcotic.” Be prepared to develop a craving for these runny, jammy eggs.

Mayak eggs: what are they?

Back in Korea a few years ago, these well-liked eggs were in high demand. What was the reason behind the fuss? Every bite packs a powerful taste punch, and that was the main attraction. In that mouthful, there are umami undertones from the rich soy sauce, a faint undertone of sweetness from the honey, freshness from the aromatics, a faint undertone of heat from the red or green chile, and a faint undertone of sesame nuttiness.

You see the addictiveness there? Before finishing the first mouthful, I bet you’re already reaching for the second one. The fact that these eggs can be prepared in less than 10 minutes for the following day is one of their wonderful qualities.


For boiling eggs:

  • 5 eggs
  • 2 tsp salt
  • 1 Tbsp vinegar

For marinade Purpose:

  • 1/2 cup soy sauce
  • 1/2 cup water

  • 1/2 cup honey or sugar
  • 3 garlic cloves, chopped
  • 3-4 scallions, chopped
  • 1 Tbsp ginger, chopped
  • 1 green chili, chopped
  • 1 red chili, chopped

  • Eggs are boiled (see note for cook times). To prevent them from continuing to cook, place them right away in a pan or pail of ice water.
  • In a bowl, combine the marinade’s components.

  • Put the eggs in a jar after peeling them (that has a lid to cover). Place the eggs in the marinade.
  • To get an even colour throughout, you can turn the eggs in the marinade after 4-5 hours.
  • The following morning, you can consume mayak eggs.


  1. How long should I let something boil?
  2. For runny soft cooked eggs, let 6 minutes.
  3. for soft boiled eggs, 7 minutes
  4. For hard boiled eggs, allow 9–10 minutes.
