Peking Duck Recipe

Peking Duck (), one of Chinese cuisine’s most iconic dishes, is named for the city where it was first prepared more than a century ago.

It is a dish made up of numerous components, including thin pancakes, a savoury sauce, some julienned veggies, and sliced pieces of roast duck with crispy skin and tender meat.  A roll made of these components is prepared for consumption.

Ingredients

  • 1 (4 pound) whole duck, dressed
  • 1/2 teaspoon ground cinnamon
  • 12 teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground white pepper
  • 1/8 teaspoon ground cloves
  • 3 tablespoons soy sauce, divided
  • 1 tablespoon of honey
  • 5 green onions, divided
  • 12 cup plum jam
  • 14 cup chutney, finely chopped
  • 1 12 teaspoons sugar
  • 1 tbsp. distilled white vinegar
  • 1 orange, sliced in rounds
  • 1 tablespoon chopped fresh parsley, for garnish

How to Prepare Peking Duck?

Step 1: Duck should be thoroughly rinsed and dried. Remove and discard the tail.

 Step 2: In a small bowl, combine the cinnamon, ginger, nutmeg, white pepper, and cloves. Put 1 teaspoon of the spice mixture in the duck’s cavity. After adding 1 tablespoon soy sauce, rub the remaining spice mixture evenly over the entire outside of the duck.One green onion should be cut in half and placed in the cavity. Cover and chill the duck for up to an overnight period.

Step 3. Position a rack in a wok or saucepan with a duck breast-side up. As the steam disappears, add more water during the hour. To drain liquids and green onions from the duck, lift it with two large spoons. Put the duck in a roasting pan, breast-side up, and pierce the skin all over with a fork.

 Step 4 .Put 375 degrees Fahrenheit in the oven (190 degrees C).

 Step 5. Roast the duck for 30 minutes in the preheated oven.

Step 6. In a small bowl, combine the remaining 2 tablespoons of soy sauce and honey.Use the honey mixture to rub the duck..

 Step 7: Raise the oven’s setting to 500 degrees Fahrenheit (260 degrees C).. Avoid letting your skin burn.

 Step 8: In a small serving bowl, combine the plum jam, chutney, sugar, and vinegar. Chope the remaining green onions and placed in another bowl.

 Step 9: Place the whole duck on a serving plate and top with fresh parsley and orange slices. Serve with chopped green onions and plum sauce.
