Ingredients

1 cup long-grain rice

 olive oil 1 tbsp

1 onion, finely chopped

2 cloves of garlic, minced

1 tsp ground cumin

1/2 tsp ground turmeric

1/2 tsp ground cinnamon

1/4 tsp cayenne pepper (or to taste)

1 1/2 cups chicken or vegetable broth

1/4 cup tomato sauce

 raisins 1/4 cup

1/4 cup slivered almonds (optional)

Salt and pepper to taste

Directions

  1. Rinse the rice in cold water until the water runs clear.
  2. Heat the oil in an oven over medium heat. Add the onion and garlic .

  3. Stir in the cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for 1 minute more.
  4. Add the rice and stir to coat with the spice mixture.
  5. Pour in the broth, tomato sauce, and raisins. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Stir in the slivered almonds, if using, and season with salt and pepper to taste.
  7. Fluff the rice with a fork and serve immediately.
